En este curso se abordarán algunos de los principales sistemas coloidales en alimentos como son espumas, geles y emulsiones. A través de ejemplos concretos y sencillos se tratarán conceptos físico-químicos complejos que se integrarán en el proceso de fabricación de varios alimentos.
